PanVero Todos Santos – Where Healthy Meets Delicious
Having been vegetarian for 20 years (mostly vegan) and gluten-free for a few years, it’s sometimes a challenge to find tasty baked goods that meet both of those criteria. Bread and pastries tend to be dry, full of “meh” ingredients, or lack in creativity. Which is exactly why I was thrilled when PanVero Whole Bakery & Elixirs opened its doors in 2023!
As a regular visitor to the Todos Santos area, I always enjoy the food scene – lively, exquisite, and thoughtful. The attention to detail and taste is a chef’s kiss!
I came across Desierto Azul, a boutique hotel and plant-based getaway a bit after they opened in Las Tunas (northern neighborhood of Todos Santos) in 2021 and became obsessed with the concept. A gorgeous luxury stay with an in-house cooking studio with classes?! Yes, please. (And, genius!)
When they announced the opening of their bakery, I couldn’t wait to try it. It’s a little ways from our bungalow (about 25 minutes), but the drive is beautiful and you can always plan to do something in downtown Todos on your way back. PanVero is situated right next to Desierto Azul and their cooking studio in the cutest little brick structure. There’s a counter to order from where you can see the delicious-looking baked goods that they have to offer and the staff is always so friendly. The menu is entirely gluten-free and lactose-free (majority of items are vegan), full of organic ingredients, whole grains and unrefined sugars, wonderful juices and smoothies, house-made nut milks, and of course, great coffee. Once you order at the counter, you can find a table in their patio space which is mostly shaded by umbrellas and features little gardens throughout. So cute!
My personal favorites:
• Gluten-Free Multigrain Bread – super hearty, comes frozen, and lasts for days
• Mocha Macadamia Cookie – macadamia, cacao, coffee, dark and white chocolate chips, and GF flours (!!!)
• Protein Boost Smoothie – nutty, thick, and so freaking yummy
