The 5-Minute Salsa Recipe That’s on Repeat

If there's one thing that's always in our fridge during a stay at the bungalow, it's this salsa.

Simple, fresh, and ridiculously good… It takes about five minutes of active time to make and disappears even faster.

The secret? Juicy, ripe tomatoes (which are always incredible in Baja) and not overthinking it. That's it!

What You'll Need:

  • 4-5 ripe Roma tomatoes (this is typically in-stock at our local supermercado, but use whatever tomatoes look delish to you)

  • ½ white onion

  • 1 jalapeño pepper, seeds removed (leave some seeds in if you prefer more heat)

  • 1-2 limes, juiced

  • Salt to taste

How to Make It:

  1. Chop everything. Dice the white onion – put in a small bowl and pour enough purified water to cover the onion. Let sit for 10 minutes (this softens the pungent onion flavor). Dice the tomatoes and place in a medium-sized bowl. Finely chop the jalapeño into small, chunky pieces and add to tomatoes. If you like it mild, remove the jalapeño seeds before chopping. If you like heat, leave some in.

  2. Mix it all together. Strain the onions and add to the bowl with tomatoes and pepper. Squeeze in fresh lime juice and add a generous pinch of salt.

  3. Taste and adjust. Need more lime? Add it. Salt? Want more heat? Toss in another half to whole jalapeño. Customize it to make it yours.

  4. Let it sit. If you have 10-15 minutes, let the flavors meld together in the fridge. If not, dig in immediately. We won't judge. :)

Pro Tips:

  • Hit up the local markets in El Pescadero or Todos Santos for the freshest tomatoes – they make all the difference!

  • This salsa is perfect with chips / tostadas, tacos / quesadillas, eggs, grilled fish, or with your leftovers from last night.

  • Craving guacamole? Mash up a few ripe avocados and add a few tablespoons of this salsa. Taste. Add more salsa and / or salt, if you desire.

  • It keeps for 2-3 days in the fridge, but it never lasts that long around here.
